What this program covers

Pernokid's seasonal cooking program — launched in 2014 — organizes learning around the calendar. Each module corresponds to a distinct seasonal window, focusing on produce availability, flavor pairing logic, and preservation methods relevant to that time of year.

The format draws from reportorial practice: just as Reuters news coverage separates observation from interpretation, each session separates technique demonstration from personal application. You watch a method executed correctly, then repeat it yourself.

  • Spring produce and quick preservation Asparagus, ramps, early peas — pickling, blanching, and storage techniques to extend short seasons.
  • Summer heat and raw preparation Minimal-cook methods for tomatoes, stone fruits, and alliums at peak sweetness and acidity.
  • Autumn braises and root vegetables Low-and-slow cooking for squash, celeriac, and dried legumes; fat rendering and stock-making.
  • Winter storage and fermentation Lacto-fermentation, root cellar logic, and cooking with cured proteins and preserved pantry stock.
